羧肽酶B，也称为肽基-L-赖氨酸（L-赖氨酸）水解酶或胰腺羧肽酶B，是 一种水解蛋白质中碱性氨基酸（赖氨酸（Lys，K）、精氨酸（Arg，R）和组氨酸（His，H））C末端氨基的特化酶。其分子量为33.8kD，等电点为6.0，最适pH范围为7.5至9.0。羧肽酶B的活性受精氨酸和赖氨酸的竞争性抑制，并受EDTA等金属离子螯合剂的抑制。
